Sweetree Manuka honey is from the nectar of the Manuka tree which is highly sought after for its antibacterial properties. Collected from coastal Manuka forests high in the hills above New Zealand's lush Marokopa Valley, this honey has a milder flavor and lighter colour compared to other Manuka varieties. The Marokopa Valley, located in the West Coast of New Zealand's North Island, is a remote settlement around the Marokopa River surrounded by steep hills covered in native forests. The river plains are used to farm cattle and sheep, whereas the upper areas where the hives are located remain wild. The producer is a small boutique operation with only 100 hives. This is a raw honey, produced using a natural creaming process (to stop self granulation) that limits heating to temperatures no higher than what would occur naturally in a beehive, thus retaining the antibacterial qualities naturally occurring in manuka honey.
